Weekly Menu

Its Tuesday night and I just came up with a weekly menu?  Yeah its spring break with the kids so I am  a little behind with everything.

Tonight we had Chicken Parmesan Casserole courtesy of Emily Bites.  It was really good the only change I made was to make my own croutons with gluten free bread.  8 pp+ for one serving I can handle that along with a side salad.

Wednesday - deconstructed stuffed green pepper casserole, salad

Thursday - chicken lo mein made in crockpot

Friday - day trip to D.C. with kids eating out

Saturday - eating out

Sunday - Easter menu, tentatively, ham, pineapple casserole, peas and carrots, au gratin potatoes.

So remember the Virgin Diet?  Worked great and I lost weight.  Starting the second week I paired it with WW and lost a little over 20 pounds to date.  I also found out I have a gluten allergy.  Twice I broke out with an itchy rash the following day after eating wheat.  So I learned my lesson and avoid it like the plague.

I am sure theres more I could mention right now but its late and I am tired.  Haven't slept well the past two nights because it has been ridiculously hot.  So ready to hit the pillow and dream.  *yawn*  K night!

First and Foremost

My first post in this blog.  What is a blog anyway?  What kind of direction do I hope to attain from typing out the things going on in my life?  Honestly, I don't know its just a way to vent to the world without doing it publicly.  These are the things that interest me so join me if you'd like or be a passer-by.

Lets start with me.  Thirty-five years old, married, 2 children living in, yup you guessed it Suburbia.  East Coast to be a little more exact but still vague.  I am trying to work on me and yet still live life as though diet and exercise isn't my main priority.  Obviously that would be my kids and husband.

A New Year a new diet right? (how cliche)  Can I tell you how many diet books I have read, done, thought about doing, and just quit before starting?  Plenty.   In 2007 I lost 70 pounds fast forward I gained some back.  Right now I think my best bet is just exercising regularly and eating nutritional foods that are healthy with an occasional cheat here and there.  But before that I agreed with my mom, love ya mom, to do a diet called the Virgin Diet.  No corn, soy, wheat, sugar/artificial sweeteners, peanuts, eggs, and dairy for three weeks.  After that you slowly introduce them back in to see what your body can tolerate.  So I figured what the hay I haven't done any formal dieting for awhile why not what do I have to lose.  Just weight!! Here I am on day 4, thankfully past all the headaches and flu like symptoms you go through withdrawing from sugar and wheat.  Its been relatively easy to stick to and I don't feel deprived.  That is always my main concern.  I need a diet where I don't feel deprived.  So heres what I ate for breakfast: steel cut oats mixed with homemade ghee (fancy word for clarified butter), almond milk, coconut milk, cinnamon, and xylitol.  Coffee was mixed with almond/coconut milk and xylitol.  For lunch I plan on having a shake and a cup of ham and bean soup.  The ham is questionable but I had it and needed to make it.  Afternoon snack will include an apple with almond butter.  Dinner is chicken with brown rice and a salad.  Water always as the beverage of choice but I did find this at Wegmans... no sugar or sweetener.  Perfect.  Many various flavors too.  Score!


Last but not least the exercise.  I am not on any training regiment or plan so I aim right now for 30 minutes at least of cardio and weights 2x a week.  Today was 2 miles walking/jogging over at my YMCA.  Boom Done!!  As Mr. Suburbia (dear husband) would say.   

My chicken is marinating right now in a garlic lemon rosemary mixture for tonight.  Yummy!  Flavor makes my food taste like a party in my mouth so if I can think ahead and actually defrost my chicken I will be ever so grateful later.  Because lets face it how dull is chicken and brown rice?  M'kay?  Rice may be mixed with sautéed onion and mushroom and my homemade ghee.  Salad dressing EVOO and apple cider vinegar with Mrs. Dash because she's got the seasoning in the bag when it comes to livening up my salad.  The lemon pepper is what i have on hand so thats what I am using.  

OK thats all for now off to get something accomplished like errands and anything else I feel up to before I plant my butt and start watching a new show.  Just wrapped up Breaking Bad.  Love Love Loved it!!!!!  I still can't get over Bryan Cranston and how amazing he was with Aaron Paul.  I hear a spinoff called Better Call Saul is looming so yeah you know what I will be watching.  I haven't started Downton Abbey (thats a possibility) my daughter got hooked on Dr. Who, hmm the tough decisions I have to make.  Seriously I better go get something done.
